Bacon Wrapped Shrimp with Mango
Ignite your grill out with the spicy and sweet BBQ Bacon Wrapped Shrimp skewers.
32 each 21/25 count shrimp (peeled and deveined)
16 slices of raw bacon, cut in half
3 each whole jalapenos, cut in half lengthwise and then cut in to 1/4” slices
8 each metal or bamboo skewers (if bamboo, make sure to soak in water for 15 minutes)
1 cup barbeque sauce
1/4 cup mango puree
2 tablespoons of fresh chopped cilantro
First, clean and oil your grill. Then, heat it to 500-550 degrees F.
Next, pour the barbeque sauce in to a small mixing bowl. Then, add the mango puree and cilantro. Mix well and hold at room temperature.
Moving on to the Shrimp. First, lay out the half-slices of bacon strips in rows about 2 inches apart. Place a shrimp at the bottom of each slice and top the shrimp with a piece of jalapeno.
Begin wrapping each shrimp tightly with the bacon. Once all the shrimp are wrapped, take one of the skewers and push it through four of the shrimp. Repeat until all the shrimp are skewered.
Place the shrimp skewers on the hot grill and turn every 1-2 minutes until the shrimp reach an internal temperature of 145 degrees. Just before removing the shrimp brush each skewer with the Mango-Barbeque sauce on both sides. Cook for 1 additional minute and remove.
Serve immediately and dig in!
