Hickory Salt Crusted Filet and Corn Salad

Ingredients

Hickory Salt Crusted Filet

  • 4 8 oz. tenderloin filets
  • 1 cup hickory salt
  • 1 stick salted butter
  • 2 cloves of fresh garlic
  • 1 teaspoon fresh lime juice

Grilled Corn Salad

  • 4 ears fresh corn
  • 1 cup diced roma tomatoes
  • 1/4 cup chopped cilantro
  • 1/3 cup sour cream
  • 2 tablespoons fresh lime juice
  • 1/4 cup grated Parmesan cheese
  • sea salt and black pepper to taste

 

Directions

Hickory Salt Crusted Filet

Step 1

Start by cleaning and oiling your grill. Then, heat it to 550 degrees F.

Step 2

Generously season each filet by rubbing the hickory salt into both sides of the meat.

Step 3

Place your seasoned filets on the grill. Cook them for about 3-4 minutes on each side, until your desired degree of doneness has been reached.

 

Grill Master Tip

Give your steaks a quarter turn halfway through cooking on each side to create diamond grill marks.

 

Step 4

While your steaks are on the grill, soften the stick of salted butter at room temperature for about 10 minutes. Once it’s soft, finely chop the cloves of garlic. Add the garlic and your teaspoon of fresh lime juice to the butter. Mix well with a fork in a small mixing bowl.

Step 5

Remove your filets from the grill and top the warm steaks with the softened garlic butter.

 

Grilled Corn Salad

Step 1

Start by cleaning and oiling your grill. Then, heat it to 500-550 degrees F.

Step 2

Husk each ear of corn and place them on the grill, rotating the ears a quarter-turn every 1-2 minutes. In total, grill the corn about 8-10 minutes or until the kernels start to char.

Step 3

Using a sharp knife, run the blade, as close to the cob as possible, along the length of each ear to remove the entire kernel. Once all corn has been removed from the cobs, place the corn into a mixing bowl.

Step 4

Add the sour cream, fresh lime juice, and cilantro to the bowl of corn. Mix well. Then, add the diced Roma tomatoes, season with salt and pepper, and gently mix again.

Step 5

Sprinkle the Parmesan cheese on top of the Grilled Corn Salad. Then, divide the corn salad onto four plates. Place your each steak on top of the salad. Then, dig in.
