Pepper Crusted Filet and Shrimp

Top your filet with even more greatness with this twist on a great cut.

Ingredients

Smoky Paprika Butter

  • 4 tablespoons butter
  • 1 teaspoon smoked paprika
  • 1 tablespoon diced shallots
  • 2 teaspoons chopped garlic
  • 2 teaspoons chopped, fresh, flat-leaf parsley
  • ¼ teaspoon red chili flakes
  • ¼ teaspoon kosher salt
  • ¼ teaspoon cracked pepper

Corn Relish

  • 1 cup grilled, cut-off-the-cob corn (substitute canned corn if preferred)
  • 1 tablespoon diced capers
  • ¼ cup red wine vinegar

Steaks and Shrimp

  • 4 6-oz. filet mignon steaks
  • 16 peeled shrimp
  • 3 tablespoons kosher salt
  • 1 tablespoon cracked black pepper
  • 1 tablespoon granulated onion powder
  • 1 tablespoon granulated garlic powder

Directions

 

Corn Relish

Step 1

Combine corn, capers, and red wine vinegar. Mix and set aside.

 

Smoky Paprika Butter

Step 1

Heat smoked paprika and butter in a sauté pan for 30 seconds. Then, let sit for 30 minutes.

Step 2

Add shallots, garlic, parsley, red chili flakes, salt and pepper. Mix and set aside until steak and shrimp are ready.

 

Steaks and Shrimp

Step 1

Clean and oil your grill. Then, heat it to 550 degrees F.

Step 2

Season filets and shrimp with salt, pepper, onion powder and garlic powder.

Step 3

Place your seasoned steaks and shrimp on the grill. Cook the shrimp for 3-4 minutes on each side or until completely cooked through. Cook your steak to desired degree of doneness (see below).

Step 4

Remove your steaks and shrimp from the grill. Top each steak with shrimp and finish with the smoky paprika butter and corn relish. Then, dig in.

 

Degrees of Doneness:

Use a meat thermometer to check temperature.

Rare: 95-105 degrees F. Cool red center.

Medium Rare: 115-125 degrees F. Warm red center with a hint of pink.

Medium: 130-140 degrees F. Warm pink center.

Medium Well: 150-160 degrees. Some pink in the center.

Well: 165-175 degrees. No pink, cooked all the way through.
